I try to eat as healthily as my willpower will allow, but more often than not I sacrifice health value for flavor profile. I also make justifications for certain foods, creating health-benefits in my head. Such as Philly Cheese Steak Stuffed Peppers. While the filling is Philly Cheese Steak, the “container” that holds the recipe together, and holds in all of the tasty meat and cheesy goodness, is a pepper. That’s healthy, right? Ah, maybe forget healthy and enjoy one of these stuffed peppers. They’re freaking delicious! This is one of the best stuffed pepper recipes I’ve ever come across.

To start the recipe off, you need to find yourself some nice bell peppers. I prefer green, but you can pick your favorite. The bell pepper, also known as a sweet pepper, or just a pepper, is a cultivar of Capsicum annuum and comes in fruits of various colors, including red, orange, yellow, green, chocolate/brown, vanilla/white and purple! Peppers are native to Mexico, and Central and northern South America. While you can eat the seeds, they sometimes taste bitter. Pepper seeds were first carried to Spain in 1493 and from there spread to other European, Asian and African countries. China is currently the world’s largest pepper producer, followed by Mexico. Peppers are rich sources of antioxidants and vitamin C. Red peppers have twice the vitamin C content of green peppers. Not only are they delicious, they’re also good for you!

What you put inside the peppers is good for you too, but in a different way. I’m sure I read that cheesesteak is good for the soul. A cheesesteak, also known as a Philly cheesesteak, is usually a sandwich made from thinly sliced pieces of steak and melted with cheese in a long hoagie roll. A popular regional food, it has its roots in none other than Philadelphia circa early 20th century. Philadelphians Pat and Harry Olivieri are often credited with inventing the sandwich in the 1930’s, although the exact story behind its creation is debated. Traditionally the meat is rib-eye or top round, although other cuts of beef may be used. Common cheeses include Cheez Whiz, American Cheese and provolone (white American cheese and provolone are typically the favorites due to their mild flavor). For this recipe, however, you drop the bread and pick up a pepper instead (which, again, makes it healthier – right?)

A lot of the ingredients are things you will find in your fridge or pantry, but you want to make sure you plan this stuffed pepper recipe ahead of time so you can purchase things like nice bell peppers, baby bells mushrooms, quality provolone or mozzarella and, most importantly, good quality deli roast beef. The recipe is relatively quick and extremely simple. Stuffed peppers aren’t nearly as difficult to make as they sometimes look. You cook your ingredients, stuff them into your peppers and bake. Then, voila! Delicious Philly Cheese Steak Stuffed Peppers!
