Candy Cane Cake
This Candy Cane Cake tastes as good as it looks! For the peppermint lovers out there, it's sure to be your new favorite cake recipe. If you're in a hurry, you can always save some time with a store-bought angel food cake.
There's no reason you can't enjoy this cake at any time of year; the candy canes give the cake a nice amount of chew that makes this cake recipe a real treat. You don't need a lot of ingredients if you are making this cake recipe from scratch just some sifted cake or pastry flour, room temperature egg whites, salt, and cream of tartar. You will also need some vanilla extract, peppermint candy canes, and some heavy whipping cream.
With your ingredients ready, you can preheat the oven to 325 degrees Fahrenheit. Then sift together the flour and some of the sugar, sift again and set aside. Prepare the rest of the cake recipe according to the directions and turn the cake batter onto an ungreased ten-inch tube pan, and then bake until the cake is browned and firm to the touch approximately 50 to 60 minutes. Invert the cake while it's in the pan, onto a cooling rack for approximately an hour. When the cake is cool, you can run a long, sharp, thin knife between the cake and the pan to loosen and remove the cake.
This is where the kids can join in and help. Put the candy canes in a large sealable plastic bag, and crush them into small pieces using a rolling pin, bottom of a small frying pan, or meat pounder. Then set the crushed peppermint candy canes aside. Then in a large bowl beat the cream with the rest of the granulated sugar until soft peaks start to form. You can frost the cake with the whipped cream using a spatula to form peaks and swirls. Then sprinkle the crushed candy canes onto the frosted cake, for the sides you'll have to be a little creative and carefully toss the crushed candy canes on. Then the cake is ready to serve, cut using a serrated knife.
